Chocolate Marshmallow Cookies
Today me and the boys decided to make cookies. It was new for us. We usually stick to the norm…chocolate chip. I do have to tell you though these cookies are pretty sinful. One was plenty for me.
The boys enjoyed licking the beaters!!
Cookie recipe:
1/2 C. butter, softened
1 C. sugar
1 egg
1 tsp vanilla extract
1/4C milk
1 3/4 C. flour
1/3 C. baking cocoa
1/2 tsp baking soda
1/2 tsp salt
16-18 large marshmallows
icing:
6 tablespoons butter
2 tablespoons baking cocoa
1/4 C. milk
1 3/4 c powder sugar
1/2 tsp vanilla extract
pecan halves
1. in large mixing bowl,cream butter and sugar until light and fluffy.Beat in egg,milk,vanilla.Combine Flour,cocoa,baking soda and salt; beat into creamed mixture.
2. drop by rounded teaspoonfuls 2 in. apart onto ungreased cookie sheets. Bake @ 350° for 8 minutes. Cut marshmallows in half. Press a marshmallow half cut side down into each cookie. Bake 2 minutes longer.Remove and cool on wire racks.
3. For icing,combine the butter, cocoa, and milk in saucepan. Bring to a boil; boil for 1 minute stirring constantly.Cool slightly and transfer to a small mixing bowl. add powder sugar and vanilla beat well. Spread over cooled cookies. Top each with 1 pecan half.
